The plain house cricket powder contains 71% protein and tastes mildly like rye bread or a roasted chickpea.
Dried insects are kind of concentrated meat like beef jerky as they lose about 75% of their weight as the water evaporates during the roasting/drying.
It takes over one thousand house crickets (acheta domesticus) to produce 100 grams of our protein-rich cricket flour. One hundred percent natural, free from artificial colors, flavorings, preservatives, and MSG. Its high protein and low saturated fat and carbohydrate content make for a healthy cooking ingredient.
Technically our ground-up crickets are not flour but ‘floured’ so they will behave differently in baked goods as opposed to wheat, coconut, or nut flours. For this reason, it’s best used in conjunction with another flour or flour substitute. If used in large amounts it may adversely affect texture so less is more.

Insects may cause an allergic reaction to those who are allergic to, for example, dust mites or shrimp. Food allergens are proteins. Sensitization to insect proteins is possible, just like to any other food proteins. The proteins that insects contain are similar to the proteins of e.g. crustaceans and mollusks. Thus persons who are allergic to prawns, for example, may have an allergic reaction from insect food. Insects may contain traces of gluten.
