Crickets have a mild, relatively neutral, and nutty taste. The plain house cricket powder made of roasted crickets tastes mildly like rye bread or a roasted chickpea with umami.
There are hundreds or thousands of cricket species. Still, only two widespread species, House Cricket (Acheta Domesticus) and the Tropical House Cricket or Banded Cricket (Gryllodes Sigillatus), are permitted as food in the United States and Europe. Most farmers breed Acheta Domesticus.
The taste of the crickets varies depending on sub-species. More farmers breed the House Cricket (Acheta Domesticus) than Banded Cricket. Many people say that House Cricket tastes better than the Tropical House Cricket (Gryllodes Sigillatus), which has a hint of astringency in its taste. Party Bugs uses House Crickets (Acheta Domesticus) in its products, but there’s little difference in taste between the two.
